Thank You Nurses and Cinco De Mayo Fun!

Happy Nurse's Day and a special thank you to all the nurses and medical workers around the world who are working on the front lines helping others during this COVID-19 crisis!  You are in our thoughts and prayers every day!

To celebrate Cinco de Mayo, we completed a free mini Cinco de Mayo mini lesson offered by the American Heritage Family School! It was wonderful! You can view it here!
We also tasted some new Mexican foods that the boys had never tasted before!  I was not completely prepared for Cinco de Mayo and since we cannot just run out to the grocery store any time we would like with the COVID-19 crisis, we just used what we already had at home!
  
I had these amazing enchiladas in the freezer!  This is my favorite Mexican food!  I would rather have this than go out to eat at a Mexican restaurant!  It really is that good!  My favorite is the cheese enchiladas!  I also let them taste refried beans that I had in our food storage in our pantry.  My seven year old liked both the enchiladas and the refried beans while my six year old hated them both!  I have to admit that I tried the refried beans myself, and I didn't like them either!
We also made the yummiest Mexican Wedding cookies!  They were so fun to make and they were so delicious!  They only require six ingredients!  We are definitely going to make these again!
